It is a wheel shaped, creamery, blue cheese made from cow's milk. The cheese has a sweet taste as already the name suggests. Dolcelatte means "sweet milk". This cheese is very soft and melts in the mouth like ice-cream. It was created by Galbani company famous for cheesemaking. The method of production is very similar to Gorgonzola, except that Dolcelatte is made from the curd of only one milking. Affinage takes two to three months and the fat content is about 50 per cent.
